Plain, easy, nourishing, and well loved by my family. Serve with bread and butter for a hearty and delicious one-bowl meal. Ingredients:
2 green onions, leaves and all, sliced |
1 lb. lean ground beef |
2 t. butter |
1/8 of a cabbage, finely sliced |
2 ribs of celery, chopped |
11/2 c. cooked brown rice |
small can (15 oz.) of diced tomatoes |
6 c. water |
2 handfuls of sun dried green beans |
salt – about 2-3 tsp. |
black pepper |
garlic powder |
onion powder |
2 tbsp. fresh cilantro, chopped, for a garnish |
Directions:
1. In a large soup pan melt the butter (or cooking oil). Add the ground beef and diced green onion. 2. When beef is browned, add remaining ingredients. All quantities are approximate, and substitutions are fine. It's a vegetable soup, so use what you have - corn, fresh tomatoes, fresh beans, leftover rice. 3. Bring the soup to a boil then reduce the temperature to a very low simmer. 4. Simmer covered for about an hour or more, until the vegetables are very tender and the flavors are well blended. 5. Add salt and seasonings to taste and simmer some more. 6. Serve garnished with cilantro. Accompany with bread and butter for a hearty one-dish meal. |
