Hearty tomato-based soup with lean hamburger and veggies Ingredients:
1 1/2 pounds hamburger |
14 mushrooms, fresh |
1 tomato |
24 ounces canned tomatoes |
21 ounces condensed tomato soup |
2 cups corn |
2 cups peas |
1 onion |
2 cups water |
Directions:
1. Brown lean hamburger with onions. Drain fat. 2. Add in mushrooms, tomatoes, peans and corn. 3. Combine with remaining ingredients either in a large pot or a slow cooker. 4. Add spices if so desired (I use cayenne, black pepper and basil) 5. Bring to a boil and then reduce to a slow simmer on low heat. Stir often. 6. Is ready to eat within 30-60 minutes, but is much better if left to simmer for a few hours. The slow cooker on low for about four hours gives it a nice, well-rounded flavour. 7. You can put pretty much any veggie in you like. |
