This is one of our go to soups in the winter. It's very economical since it uses hamburger. My kids love this and I love that they are getting their veggies in. Ingredients:
1 lb hamburger |
1 onion, chopped |
1/2 cup celery, diced |
28 ounces tomatoes |
2 carrots, diced |
2 1/2 cups boiling water |
4 teaspoons salt |
1 bay leaf |
1/4 teaspoon thyme |
1/4 teaspoon basil |
1/4 teaspoon sage |
1/2 cup uncooked rice |
2 potatoes, diced |
1 cup cabbage, chopped |
Directions:
1. Brown hamburger and drain off the fat. 2. Add onions and celery. 3. Cook until transparent. 4. Add tomatoes, carrots, water, spices and rice. 5. Cook 20 minutes. Add potatoes and cabbage. 6. Cook 30 minutes more. 7. Serve. |
