A down home comfort food! Ingredients:
1 1/2 lbs lean ground beef |
1 -2 onion, chopped |
1 (28 ounce) can diced tomatoes |
2 cups water |
1 (10 ounce) can tomato soup |
1 dash parsley |
4 carrots, chopped |
3 stalks celery, chopped |
8 tablespoons pearl barley |
1/2 teaspoon thyme |
1 bay leaf |
3 (10 ounce) cans consomme or 2 beef bouillon cubes, mixed with 2 cups of water |
salt and pepper |
Directions:
1. Brown meat and onions. 2. Drain well. 3. Combine all ingredients in a large pot. 4. Cook at least 2 hours or use a crockpot and cook up to 8 hours. 5. Remove bay leaf before serving. 6. This soup freezes well. |
