An easy one-dish meal. My family loves this served with Sopapillas (Yeast variation). I can make them while this simmers. Ingredients:
1 1/2 lbs lean ground beef |
1 cup onion, chopped |
1 cup potato, cubed |
1 cup carrot, diced |
1/2 cup celery, diced |
1/4 cup rice |
1 (28 ounce) can stewed tomatoes |
1 small bay leaf |
1/2 teaspoon thyme |
1/4 teaspoon basil |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
1 1/2 quarts water |
Directions:
1. Sauté ground beef and onion until brown; drain. 2. Add other ingredients. 3. Bring to a boil. 4. Reduce heat and simmer at least 1 hour. |
