I keep frozen cooked burger, onions, peppers and rice in the freezer so this meal comes together very quickly for me. This is one of my go-to meals. Ingredients:
1 lb ground beef or 1 lb ground turkey |
1/2 cup onion, diced |
1/2 cup green pepper, diced |
2 cups cooked rice |
8 ounces tomato sauce |
1/2 cup beef broth |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 cup shredded cheddar cheese |
Directions:
1. In a skillet cook beef, onion and peppers until the meat is cooked. 2. Drain fat. 3. Add rice, tomato sauce, broth, salt and pepper. 4. Stir, cover and simmer for 10 minutes. 5. Add more broth if needed. 6. Sprinkle with cheese and let melt. |
