This is my version of a betty crocker recipe that my kids LOVE!! Even eat the peas I sneak in there.. Ingredients:
1 lb of ground beef |
1 1/3 cups instant potato flakes |
plus another 1 and 1/3 for the frosting |
1 egg |
1 teaspoon of salt |
1/8 teaspoon of pepper or more if you like pepper |
1 teaspoon of chopped garlic |
1/4 cup ketchup |
1 cup of milk |
plus milk for the mashed potatos on top |
3/4 cup of shredded cheese we like the mexican mix but any kind will do |
Directions:
1. Mix meat, 1/13 of the instant potatos(dry) the egg the salt, pepper , garlic,milk and ketchup. 2. spread mixture into an ungreased pie pan 3. bake uncovered for 35-40 minutes 4. prepare the remaining mashed potatos as directed on the box we like to make a little extra for a thicker layer. 5. after the meatloaf has been cooking for about 40 minutes add the mashed potatos to the top at this point I like to add a layer of peas before I put on the potatoes 6. add cheese to the top of the potatoes and bake for another 5 minutes until the cheese melts. |
