This is my take on a shepherd’s pie. If you have some leftover pot roast use it instead of ground beef. Ingredients:
1 lb ground beef |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 small onion, chopped |
3 tablespoons tomato paste |
2 1/2 cups potatoes, mashed, divided |
1 cup american cheese, grated |
1 (15 ounce) can corn, drained |
Directions:
1. Preheat oven to 350 degrees Fahrenheit. 2. In a hot skillet crumble and brown the ground beef. 3. As beef begins to cook, add salt, pepper, chopped onion. 4. When meat is browned, stir in tomato paste; set aside. 5. In a 1-1/2 quart baking dish, spoon in 1/2 cup mashed potatoes; spread on bottom of dish. 6. Pour hamburger mixture on top of the potatoes. 7. Add cheese on top of hamburger. 8. Drain corn; spread on top of cheese. 9. Spread remaining potatoes on top of corn. 10. Bake for 30 minutes. |
