This is one of my favorites growing up. It's fast and easy. Ingredients:
1 lb extra lean ground beef |
1/2 cup chopped onion |
16 ounces french style green beans |
10 1/2 ounces low-fat tomato soup |
1/2 teaspoon italian seasoning |
3 medium potatoes, peeled and quartered |
1 egg, beaten |
milk |
1/2 cup shredded cheese |
salt and pepper |
Directions:
1. In a large skillet, cook ground beef and onion until meat is brown and onion is tender, drain fat. 2. Stir in green beans, soup and 1/4 cup water, salt and pepper. 3. Turn mixture into 1 1/2 qt casserole dish. 4. In a covered pan, cook potatoes in boiling water for about 20 minutes or until just tender, drain. Mash while hot, stir in egg. 5. Add enough milk to potatoes to hold their shape. 6. Season potatoes with salt and pepper. 7. Drop potatoes in mounds on beef mixture. Sprinkle with cheese. 8. Bake uncovered for 25-30 minutes 350* or until heated through. |
