These are from a mimeographed, hand bound cookbook given to me by Lioness Joan Nielsen of Marshall, Saskatchewan, about 20 years ago. Marshall isn't quite Alberta, but it's just a few miles east of the border on Highway 16. The book is full of prairie standbys so if you need more, let me know. The can sizes aren't given. I would guess 14 ounces (400mL) but you may have to experiment. Hamburger Casserole Lioness Marilyn Eric, Marshall Ingredients:
1/2 cup rice |
1 onion, chopped |
3 cups potatoes, sliced |
salt & pepper |
1 lb hamburger |
1 (15 ounce) can tomatoes |
Directions:
1. Season hamburger with salt and pepper and spread in the bottom of an oven safe 2 quart casserole dish. 2. Spread uncooked rice over hamburger. 3. Add sliced onions, then sliced potatoes and season with salt and pepper. 4. Pour can of tomatoes over all. 5. Bake in 350F oven for 1 1/2 to 2 hours. |
