This is a thick, hearty, soup that is almost a stew. It's what you do with that leftover hambone. Slow cooked so it's easy to make. Ingredients:
1 hambone with lots of meat still on it. |
2 lb navy beans |
3 cloves garlic, chopped. |
1 can diced tomatoes |
5 small potatoes chopped into 2 inch cubes |
1 small onion, chopped. |
Directions:
1. Soak beans overnight in cold water, enough to cover the beans. 2. Drain and place in crockpot. Add all other ingredients except potatoes. 3. Add enough water to cover and cook on low until beans are tender. About 12 hours. 4. Remove hambone, remove chunks of meat and return them to the crockpot. 5. Add pototoes, turn crockpot to high and cook for about an hour or until potatoes are done. |
