12 ounces tater tots (18 tots) |
2 cans (14 fl. oz. each) reduced-sodium chicken broth |
24 ounces (2 12 oz cans) nonfat evaporated milk |
2 cups (8 oz.) cooked ham, cut in 1/2 inch pieces |
1 3/4 cup instant mashed potatoes |
15 1/4 oz corn, drained |
2 teaspoons onion powder (leave out for jim) |
1/4 teaspoon ground black pepper |
1 sliced green onions (optional) |
Directions:
1. Prepare tater tots according to package directions. 2. Meanwhile, combine broth and evaporated mild in large saucepan. 3. Bring mixture just to a boil over medium-high heat, reduce heat to low. 4. Add ham, potato flakes, corn, onion powder and black pepper. 5. Cook, stirring frequently, to 5 to 8 minutes until creamy and slightly thick. 6. Top each serving with three potato puffs and green onions if desired. |
