Sounds likea healthy yummy dinner. I will be trying it tonight! Ingredients:
2 egg whites |
1/4 cup flour |
1 cup sweet potato |
1/2 cup cooked ham |
1 tablespoon butter |
1 pepper |
Directions:
1. Using a large bowl, combine eggs or egg product, flour and pepper. Add potatoes and ham. 2. Melt butter or margarine in a large skillet over medium heat. 3. Using a 1/4 cup measuring cup, pour batter into pan making as many 3 circles as the pan will hold comfortably, with plenty room to flip (usually about 3). 4. Cook for about 2 minutes or until bottoms begin to get lightly browned and top is bubbling, turn the cakes and remove when second side is golden brown. 5. Keep covered until all are done and ready to serve. 6. Serve with low fat butter and sugar free or low sugar syrup, if desired. |
