Any leftover ham and beans would be great reheated and served with eggs and toast for a hearty breakfast. (From Betty Crocker's Money Saving Meals cookbook). Ingredients:
1 teaspoon vegetable oil |
1 center-cut fully cooked ham steak (about 1 lb) |
1 small green bell pepper, chopped (1/2 cup) |
1 small onion, chopped (1/4 cup) |
1 (16 ounce) can baked beans |
1/4 cup barbecue sauce |
Directions:
1. In 12 skillet, heat oil over Medium heat. 2. Cook ham steak in oil 6-8 minutes, turning once, until browned and hot. 3. Remove steak to deep serving platter; cover to keep warm. 4. In same skillet, cook bell pepper and onion over Medium heat 2-4 minutes, stirring frequently, until crisp-tender. 5. Stir in beans and barbecue sauce. 6. Heat until bubbly. 7. Pour beans over ham. |
