A simple way to dress up couscous, this colorful, foolproof dish makes a lovely one-pot meal when time's tight. Ingredients:
2 cups water |
1 cup chopped fully cooked ham |
1 cup chopped fresh spinach |
1/2 teaspoon garlic salt |
1 cup uncooked couscous |
1/4 cup shredded cheddar cheese |
Directions:
1. In a large saucepan, combine the water, ham, spinach and garlic salt. Bring to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until water is absorbed. Fluff with a fork. Sprinkle with cheese. Yield: 4 servings. |
