Ham & Pineapple Pizza Muffins |

This recipe used to be my kids favourite. It was a lot cheaper than buying pizza and they could choose different toppings, they even would ask for these to be made instead of getting pizza! Ingredients:
4 english muffins |
1/2 cup tomato paste |
1 teaspoon dried oregano |
440 g pineapple chunks in juice, drained |
150 g ham, chopped |
200 g grated mozzarella cheese |
Directions:
1. Split each muffin in half, spread each with the paste, top each muffin with the pineapple, ham then cheese and oregano. Place muffins on oven tray in moderate oven for about 15 - 20 minutes, or until cheese is melted and pizzas are heated through. 2. Serve immediately. |
