Ham, Pear, and Arugula Sandwiches |

Coarse, slightly sour pumpernickel bread is the perfect base for maple-flavored ham, fresh pear slices, and a sweet cream cheese spread. Toast the bread before assembling the sandwiches, if desired. Baby spinach may be substituted for the arugula. Ingredients:
1/3 cup (2.6 ounces) 1/3-less-fat cream cheese |
2 tablespoons mango chutney |
1 1/2 tablespoons finely chopped pecans |
8 (1.1-ounce) slices pumpernickel bread |
6 ounces thinly sliced maple-flavored ham |
2 cups baby arugula |
1 small ripe pear, thinly sliced |
Directions:
1. Combine first 3 ingredients in a small bowl, stirring well. Spread cheese mixture evenly over each bread slice. Top 4 bread slices evenly with ham, arugula, and pear slices. Top with remaining bread slices, cheese-mixture side down. |
