From TOH Quick Cooking March/April 1998. I have made these a few times and they are really good for a quick breakfast. Making these is a good way to use up leftover holiday ham. I think these taste better warm so the next day I microwave them before eating. I leave out the onions because I don't like them. Ingredients:
2 cups all-purpose flour |
1/4 cup sugar |
2 teaspoons baking powder |
1 teaspoon salt |
1/4 teaspoon pepper |
6 eggs |
1 cup milk |
1/2 lb cooked ham, cubed |
1/2 lb sliced bacon, cooked and crumbled |
1 small onion, finely chopped |
Directions:
1. In a bowl, combine the flour, sugar, baking powder, salt and pepper. Beat eggs and milk; stir into dry ingredients until well mixed. Stir in ham, cheese, bacon and onion. Fill well-greased muffin cups 3/4 full. (Paper-lined muffin cups are not recommended because the muffins will stick to them). 2. Bake at 350 degrees for 45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack. |
