Central PA specialty, Ham loaf 's main ingredient can be hard to find outside of PA. If you can't grind your own ham at home, you might luck out and find a butcher who can for you. The milk and eggs will keep it moist while cooking, and the sauce is hard to beat (never hurts to make extra). Ingredients:
3/4 lb ground cooked ham |
3/4 lb ground pork |
2 eggs, beaten |
3/4 cup breadcrumbs (until desired consistency) |
3/4 cup milk |
ground black pepper, to taste |
5 teaspoons mustard |
1/2 cup brown sugar |
6 ounces pineapple juice |
Directions:
1. Preheat oven to 350 degrees. 2. Mix loaf ingredients together and form into a loaf shape and place in baking dish. 3. Mix sauce ingredients together and divide into two portions. 4. Using some of the first portion, lightly baste loaf in pan and place in the oven. 5. Cook for 1 1/2 hours, using the remainder of the first sauce portion to baste occasionally. 6. Let rest about 15 minutes, slice and serve with second portion of the sauce. |
