Ham It Up Egg White Casserole |

A good thing to do with left over egg whites. Spinach, mushrooms and ham make this good for breakfast, lunch or dinner. Ingredients:
1 1/2 cups egg whites |
10 oz frozen leaf spinach |
1/2 cup mushrooms |
1 medium raw green-bell pepper |
8 stalk fresh green onions |
2 egg |
1/2 cup shredded cheddar cheese |
4 oz boneless ham steak low sodium |
Directions:
1. Preheat oven to 350 and spray a square glass pan with PAM. 2. Thaw and drain the frozen spinach. Dice the ham, pepper and green onions. Slice the mushrooms ( I used about 4 medium sized white mushrooms ). 3. Whisk the eggs together with the shredded cheese. Pour into the bowl of prepared ham and vegetables and mix well. 4.
