This is good served with Mac 'n Cheese, or scrambled eggs, or over toast. Ingredients:
1/2 lb boiled ham, cut into 1/2 inch dice (about 2 1/2 cups) |
2 tablespoons butter |
1 teaspoon butter |
2 tablespoons flour |
1 cup milk |
1/8 teaspoon nutmeg (try fresh ground) |
salt & freshly ground black pepper |
1 tablespoon shallot, minced |
3 tablespoons dry sherry |
Directions:
1. Heat 2 tablespoons butter in a skillet. Sprinkle flour around pan and stir with a wire whisk. Cook 30 second to 1 minute. Add milk, stirring with the whisk. Season with nutmeg, salt and pepper. Turn off heat and allow to cool, stirring occasionally, about 5 minutes. 2. Meanwhile, in another skillet heat 1 teaspoon of butter and cook ham for 1 minute. Add shallot, cook another minute. Stir in the sherry and heat through. Add the cream sauce and turn off the heat. Serve. |
