HAM FRITTERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lindsey Estate in Rockwall, Texas in 1994. Ingredients:
3/4 cup cured ham minced |
1 small onion chopped fine |
1/2 cup olive oil for frying |
1/4 teaspoon salt |
batter |
1/3 cup flour |
1/3 teaspoon baking powder |
1 egg |
1/3 cup water |
Directions:
1. Put flour in mixing bowl and gradually add 1/3 cup to make batter consistency of cream sauce. 2. Stir in one lightly beaten egg and the baking powder. 3. Fry minced ham in 2 tablespoons olive oil. 4. When ham is browned remove and fry chopped onion until golden brown. 5. When ham and onion have cooled add to fritter batter along with any oil left in frying pan. 6. Season with salt then heat enough oil in large frying pay to cover bottom to depth of 1/4 . 7. When oil begins to smoke drop in cold mixture and fry until well browned turning once. 8. Drain on brown paper before serving. |
