Ham, Egg and Cheese Sandwiches |

These make a great breakfast, lunch or dinner! Ingredients:
3 tablespoons butter, softened |
4 large eggs |
salt, to taste |
pepper, to taste |
8 slices sourdough bread |
1/2 lb deli-sliced ham |
1 cup monterey jack pepper cheese, shredded |
Directions:
1. In large nonstick skillet, heat 1 T butter over medium-high heat. 2. Working in batches, fry the eggs; season with salt and pepper. 3. Brush the bread with the remaining butter. 4. Layer the eggs, ham and cheese on half of the bread slices, then set the remaining bread slices on top. 5. In the same skillet, working in batches, fry the sandwiches over the medium heat, turning once, until golden-brown, about 8 minutes. |
