This is a family favorite around my house. It is a great way to use up leftover ham or veggies from a vegetable tray. I have even added chopped broccoli & cauliflower. To speed up prep time, use a food processor to chop the veggies and the ham. Ingredients:
1 cup onion, chopped |
1/2 cup celery, chopped |
1/2 cup carrot, chopped |
1/4 cup parsley |
2 cloves garlic, minced |
1/4 cup butter |
1/4 cup flour |
1 tablespoon ground mustard |
1/8 teaspoon pepper |
1 cup ham, chopped |
2 1/2 cups chicken broth |
2 cups milk |
3/4 lb cheddar cheese |
Directions:
1. In a large saucepan over medium heat; saute onion, celery, carrots, parsley and garlic in butter for 5 minutes. 2. Stir in flour, ground mustard, and pepper. 3. Add ham and cook for 1 minute stirring constantly. 4. Gradually add broth and milk; bring to a boil. 5. Cook and stir for 2 minutes. 6. Stir in cheese; reduce heat. 7. Cook and stir till cheese is melted. 8. DO NOT BOIL. |
