Ingredients:
1 (14 1/2-ounce) can whole tomatoes, undrained |
1 cup regular rice, uncooked |
1 cup minced onion |
1 cup (4 ounces) shredded cheddar cheese |
1 cup diced celery |
1 cup boiling water |
3/4 pound ground, cooked ham |
1/3 cup olive oil |
1 1/4 teaspoons salt |
1/4 teaspoon pepper |
Directions:
1. Combine all ingredients in a large mixing bowl, stirring until well blended. Spoon mixture into a lightly greased 2-quart casserole. Cover and bake at 325° for 2 hours or until rice is tender. |
