Ham & Asparagus Casserole |

I found this recipe in a casserole cookbook. I am sure when I make this my family will love this. Ingredients:
1 (10 ounce) package frozen cut asparagus, thawed and drained |
4 hard-boiled eggs, peeled and chopped |
1 cup cubed cooked ham |
1/4 cup shredded american cheese |
2 tablespoons chopped green peppers |
2 tablespoons chopped onions |
1 tablespoon chopped fresh parsley |
1 tablespoon lemon juice |
1/2 cup light cream |
1 cup condensed cream of mushroom soup, undiluted |
1 cup breadcrumbs |
2 tablespoons butter, melted |
Directions:
1. Preheat oven to 375 degrees. 2. In a greased 2 1/2 quart baking dish, combine asparagus, eggs and ham. 3. Add cheese, green pepper, onion and parsley, mix gently. 4. In a small bowl, blend lemon juice, cream and soup, add to casserole and mix well. 5. Combine bread crumbs, and 2 tablespoons butter, sprinkle over casserole. 6. Bake for 25 minutes. 7. Let stand a few minutes before serving. |
