Ham, Artichoke & Lemon Pilaf

I have recently become a big fan of artichokes from a jar and it is always nice to find something new to do with them. This recipe sounds interesting and it is low in saturated fat and because of the basmati rice it is low GI too. I originally found this recipe in BBC Good Food Magazine.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
8 1/2 ounces basmati rice
4 1/2 fluid ounces vegetable stock
10 1/2 ounces artichoke hearts, from a jar, sliced
10 1/2 ounces ham, thickly sliced, cut into chunks
2 lemons, juice and zest of
3 tablespoons chopped fresh mint
Directions:
1. Heat the oil in a large pan, then add the onion and fry for a couple of mins until starting to soften.
2. Stir in the rice, then pour in the stock and bring to the boil. Cover and cook for 5 minutes.
3. Add the artichokes, ham, half the lemon zest and all of the juice to the pan. Cover and cook for 5-7 mins more until the rice is tender.
4. Stir in the mint, then divide between four bowls and scatter over the remaining zest.
