Ham-and-Vegetable Couscous |

Ingredients:
1 3/4 cups water |
1/2 teaspoon dried basil |
1 cup uncooked couscous |
1 cup chopped honey-baked ham |
1/3 cup thinly sliced green onions |
1/4 cup grated parmesan cheese |
1 (15.25-ounce) can no-salt-added whole-kernel corn, drained |
3 tablespoons water |
2 tablespoons lemon juice |
1 tablespoon extra-virgin olive oil |
2 teaspoons dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon coarsely ground pepper |
Directions:
1. Bring 1 3/4 cups water and basil to a boil in a medium saucepan, and stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Combine couscous, ham, green onions, cheese, and corn in a bowl; set aside. 2. Combine 3 tablespoons water and remaining ingredients; stir well with whisk. Pour dressing over couscous mixture, tossing gently to coat. |
