A breakfast treat you can start either with fresh mashed or leftovers, cook time depends on this. Ingredients:
4 medium potatoes, cooked and mashed |
4 mushrooms, finely diced |
4 slices ham, finely diced |
1 onion, finely diced |
1/4 cup flour |
1 1/2 tablespoons butter |
1 egg, beaten |
salt & pepper |
oil (for frying) |
Directions:
1. Combine all ingredients except oil. Turn onto a floured board and knead until smooth. Roll out like a large sausage. Cut into 10 slices. 2. Heat oil and fry each slice until browned on both sides. Serve with butter for breakfast. 3. tasty variations:. 4. replace ham with:. 5. 1 cup cooked and diced chicken. 6. 4 slices bacon, diced and lightly cooked. 7. 3 tbsp grated Cheddar cheese. 8. replace mushrooms with:. 9. 1 tomato, finely chopped. 10. 1/2 green pepper, seeded and diced. 11. 3 tbsp corn kernels, drained. 12. replace onion with:. 13. 2 green onions, thinly sliced. 14. 1 tbsp chopped fresh chives or parsley. |
