Au gratin potatoes are always a great side when making a ham dinner. Figured why not combine the both and make a casserole. Ingredients:
3 russet potatoes, peeled and sliced 1/8 inch thick |
1/4 cup butter |
1/2 onion, diced |
1 tbsp. flour |
salt and pepper to taste |
2 cups milk, heated |
2 cups cheddar cheese, shredded (i used kraft 4 cheese blend) |
2 cups ham, diced |
Directions:
1. Preheat oven to 375 2. Spray 2 qt. baking dish with cooking spray 3. Cut potatoes into 1/8 inch slices (I used a mandolin) 4. In saucepan over medium heat, melt butter 5. Add onion and cook until tender 6. Stir in flour, salt and pepper 7. Cook, stirring constantly until almost bubbly 8. Remove from heat 9. Slowly stir in milk and then 1 1/2 cups cheese 10. Over med low heat, stirring constantly heat until cheese is melted 11. Spread 1/2 potatoes in casserole dish 12. Spread ham over potatoes 13. Add remaining potatoes 14. Pour cheese sauce over casserole 15. Bake covered 1 hour 16. Top with remaining cheese 17. Bake uncovered until top is golden brown and bubbly |
