Not your usual breakfast or brunch casserole! Ingredients:
1 pound sliced baked ham or sliced canadian bacon |
6 slices white bread, toasted, buttered and halved |
10 eggs |
salt to taste |
1/2 teaspoon dry mustard |
black pepper to taste |
Directions:
1. Lightly grease a 9 X 13 casserole baking dish 2. Arrange Canadian bacon or ham, overlapping, against sides of dish 3. Cover bottom with toast, keeping bacon or ham in place 4. Separate eggs, placing whites in a large bowl 5. Keep each yolk in its half shell, placing the half back in the egg carton 6. You will use 8 yolks 7. With an electric mixer, beat the whites with 1/2 teaspoon salt and the mustard, until stiff 8. Spread the beaten whites over the toast, meat mixture, mounding high 9. Make 8 depressions, spacing evenly 10. Bake uncovered 1-2 minutes or until slightly set 11. Remove from oven 12. Place an egg yolk in each depression 13. Sprinkle each with a little salt and pepper 14. Bake, uncovered 8-10 minutes, or until whites are slightly golden and yolks are set 15. Serve at once |
