Ham and Cheesy Potato Casserole |

A great way to use up left over ham. I usually use the lower fat canned soups. You can also sprinkle crushed cornflakes on top for an extra crunch! Ingredients:
1 (24 ounce) package frozen o brian hash brown potatoes |
1 cup cheddar cheese, shredded and divided |
2 cups cooked ham, cubed |
3/4 cup chopped onion |
2 cups fat free sour cream |
1 (10 3/4 ounce) cream of chicken soup |
1 (10 3/4 ounce) cream of celery soup |
1/4 teaspoon pepper |
Directions:
1. In a large bowl, combine the potatoes, 1/2 cup of the cheese, ham and onions. 2. In another bowl, combine the sour cream, soups and pepper; add to the potato mixture and mix well. 3. Pour into a greased 9x13 inch baking dish. 4. Sprinkle with the remaining cheese. 5. Bake, uncovered at 350 degrees for 60-65 minutes until bubbly. 6. Let stand for about 10 minutes before serving. |
