Ham And Asparagus Chowder |

A really nice flavor combination and wicked easy to make. This is not a traditionally thick chowder, it's really more like a soup but can easily be made thicker. Ingredients:
1 1/2 c cubed unpeeled red potatoes |
1/2 cup water |
1 1/2 c cut asparagus ( 1 1/2 “ pieces) |
1 1/2 c cubed cooked ham |
1 can condensed healthy request cream of mushroom soup |
2 cup 1/2 & 1/2 or light cream |
4 tsp cornstarch and water (optional) |
freshly ground pepper |
Directions:
1. In a 2 quart saucepan, heat potatoes & water to boiling. Reduce heat to mediun. Cover; cook 3 to 5 minutes or until potatoes are crisp-tender 2. Add asparagus and ham. Cover; cook 3 to 5 minutes or until heated through and potatoes are tender (do not overcook) 3. Stir soup and 1/2 & 1/2 together and stir into mixture 4. If a thicker chowder is desired, whisk the cornstarch together with a little cold water (just enough so you can pour it) and stir into the soup. 5. Cook, stirring for 2 minutes or until thickened 6. Heat through 7. Sprinkle with pepper before serving |
