Halushky and Cottage Cheese

lf you have never had this before, you would think that this is a mistake. An extensive web search,however, will reveal various versions of halushky made with several different types of fresh, soft-curd cheeses. This one will knock your socks off
Ingredients:
1 recipe of halushky dumplings, potato type (see below)
1/4 cup butter (or margarine)
2 tablespoons dry onion flakes
1 pint cottage cheese, 4% fat, small curd (local store brands work better than big-name brands)
dill, for seasoning (freshly chopped or dried)
salt, for seasoning
Directions:

2. Place halushky dumplings in large mixing or serving bowl. Remove plastic cover and aluminum seal from cottage cheese container and preheat in microwave oven for a minute, or just enough to remove its chill.
3. In a small sauce pan, brown butter over low heat. Agitate melted butter to continuously assess its level of toastiness. When butter solids are just a bit lighter than carmel-color, remove from heat. (lf butter turns black or starts to smoke, dump it out and start over.).
4. Quickly add the dried onion and gently swirl mixture with pan. Butter will foam as onion pieces turn brown. After about 30 seconds of swirling, quickly pour hot mixture over dumplings.
5. Add the preheated cottage cheese to the dumplings and mix all together. The dill can be sprinkled on the mixture before serving or can be mixed in as desired. ·.
6. Though this dish is delicious to eat fresh from the serving bowl, unbelievably it’s just as good (sometimes even better) when eaten as a left—over. When reheated in the microwave the following day, the cheese melts and gets wonderfully stringy like the cheese stretching between pieces of hot pizza.
