Haloumi With Chick Pea Salad |

ITS WAYYY TOO EASY. Haloumi is amazing. Its the cheese that doesn't melt. And there's a serious lack of haloumi recipes on this site. The chick pea salad is also great by its self for lunch. This makes 2 or three light servngs. Ingredients:
haloumi cheese. (2 or 3 half cm-thick slabs per person), drained on paper towel |
1 can chick peas (garbanzos i think you call em), drained and rinsed |
1 tomato, diced |
about half a red onion, diced |
half a cucumber (i prefer the lebanese variety) diced |
1/4 cup parsley, chopped |
2 tbsp mint leaves, chopped |
1 tbsp lemon juice |
Directions:
1. Combine everything except the haloumi in a salad bowl. (thats done) 2. Heat a non stick frypan and spray with oil. Cook the haloumi for about 2 minutes or so each side. (itll its golden like) 3. SERVE 4. (great for hot summer nights, yes? yes.) |
