Just what the title says. Chewy. Chocolatey. Yummy cookies that have a little touch of something healthy in them so the kids are getting something good for them. I make these around Halloween time when pumkins are a plenty. (Hence the name!) Ingredients:
3/4 cup margarine, softened |
1 1/4 cups brown sugar |
2 eggs |
1 cup pumpkin puree (i use fresh, but canned is also good) |
1 teaspoon vanilla |
2 cups flour |
1 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon nutmeg |
1/2 teaspoon allspice |
1/2 teaspoon ground cloves |
1 cup chocolate chips |
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional) |
1/2 cup raisins, i don't like raisins myself, so i don't put them in (optional) |
Directions:
1. Preheat oven to 350 degrees F. 2. In a large bowl, cream together margarine, sugar, eggs, pumpkin and vanilla. 3. In a separate bowl combine flour, baking powder, cinnamon, baking soda, salt, nutmeg, allspice and cloves. Add dry misture to wet ingredients and mix. Stir in chocolate chips, and nuts/raisins if using. 4. Drop rounded teaspoons full onto a greased cookie sheet. 5. Bake for 10-12 minutes or until golden brown. |
