Halibut With Lime and Tequila |

Arriving home late last Friday evening I was searching for something quick to make for dinner and was inspired by the margarita ingredients which my husband had placed on the kitchen counter... Ingredients:
3/4 lb halibut steaks |
1/3 cup freshly squeezed lime juice |
3 tablespoons tequila |
2 teaspoons olive oil |
1 tablespoon chopped cilantro |
2 cloves garlic, minced |
2 teaspoons brown sugar |
1 teaspoon freshly grated lime rind |
1/4 teaspoon pickapeppa sauce |
salt and pepper |
Directions:
1. Mix marinade ingredients (all except fish) in a plastic container large enough to hold fish in a single layer. 2. Add halibut and turn over. 3. Cover and refrigerate for 30 minutes, turning at least once. 4. Remove fish from marinade and pour marinade into a small saucepan. 5. Bring to a boil, reduce heat to simmer, and cook for 5 minutes, stirring often. 6. Remove from heat. 7. Grill halibut over medium-hot coals for about 4 minutes per side, or until fish is done in the center. 8. Serve marinade sauce over fish. |
