This recipe came from an estate sale in Plano, Texas in 1988. This is an awesome recipe and one that I make a few times a year especially when my brother come over. They are seafood lovers and rave about this recipe. Read more . Enjoy Ingredients:
halibut with grilled pineapple and raisin salsa |
1/2 cup raisins |
1/2 cup dark rum |
1 fresh pineapple trimmed cored and sliced |
vegetable oil as needed |
2 chipotle peppers canned in adobo sauce rinsed seeded and finely diced |
juice of 1 lime |
zest of 1/2 orange |
juice of 1/2 orange |
1/4 cup extra virgin olive oil |
1 green onion sliced |
2 tablespoons finely chopped roasted red pepper |
2 tablespoons finely chopped cilantro |
1 teaspoon sea salt |
6 halibut steaks |
1 tablespoon lemon pepper seasoning |
Directions:
1. Plump raisins in rum for 30 minutes then drain well. Heat grill to medium high. Brush pineapple with oil then 2. grill until lightly caramelized on both sides. Cool slightly and cut into 1/2-inch pieces and place in mixing bowl. 3. In separate bowl combine chipotles, lime juice, zest and orange juice. Whisk in olive oil vigorously. Pour over pineapple chunks then fold in green onions, red peppers, cilantro and raisins. Season with sea salt then set aside. Brush halibut with oil then grill 5 minute on each side turning only once. Season with lemon pepper and serve with salsa. |
