Halibut with a zing! This dish, seasoned with lime juice and a cilantro-lime-garlic sauce, served with beans and bread makes a delicious dinner. Ingredients:
4 (6 oz) halibut filets |
1 lime, sliced into wedges |
1 tbsp fresh lime juice |
1/2 cup fresh cilantro, chopped |
2 tbsp butter |
1 tbsp olive oil |
3 cloves garlic, roughly chopped |
salt and pepper (to taste) |
Directions:
1. Preheat a grill at high heat. Squeeze the lime juice from wedges onto the fish fillets, and season with salt and pepper. 2. Grill the fillets, on each side for around 5 minutes (fish should be browned able to be flaked with a fork). Remove and place on a warm serving plate. 3. In a skillet, heat the oil over medium heat. Add the garlic and cook until fragrant, (approximately 2 minutes). Mix in butter, the left over lime juice and cilantro. Serve the filets with the cilantro butter sauce. |
