Halibut with Bacon and Mushrooms |

Halibut with bacon and mushrooms. Good served over rice. Ingredients:
6 bacon |
1 small onion, chopped |
1 tbs thyme |
8 oz mushrooms, sliced |
2 tbs olive oil |
4 (6oz) halibut fillets |
1/2 tsp salt |
1/2 tsp pepper |
1 cup white wine |
2 tbs parsley |
Directions:
1. Cook bacon until crisp. Remove from pan and let cool and crumble. 2. Add onion, bacon and thyme to bacon drippings and sautee for 3 mins. Remove from pan. 3. Heat oil in pan. Sprinkle fish with salt and pepper. And fish to pan and cook for 2 mins on each side. Add mushroom mixture to pan. Stir in wine, and cook for 3 mins or until fish flakes easily. 4. Sprinkle with bacon and parsley. |
