20 ounces halibut fillets |
1/2 cup cottage cheese |
3 ounces kalamata olives, pitted |
1 clove garlic, finely chopped |
1 ounce arugula (a handful) |
1/4 teaspoon ground black pepper |
1/4 small onion, finely chopped |
1 tablespoon olive oil |
1/2 cup dry white wine |
salt |
4 slices lemons |
Directions:
1. Coarsely chop the olive and the arugula. Combine the cottage cheese, arugula, garlic, and pepper. Mix well and adjust the seasoning with salt. Cover the fish fillets with a layer of the mixture. 2. Preheat broiler. 3. Heat a heavy ovenproof skillet over low-medium heat. Add olive oil and chopped onions. Cook until the onions are soft, but not browned. Add wine and bring to a boil. 4. Place fish fillets in the pan. Place under broiler for 7-10 minutes. 5. Remove fillets from pan, sprinkle with a bit of the cooking liquid, garnish with lemon slices, and serve! |
