I haven't tried this one yet but it looks great. From First for Women magazine 1/17/05 Ingredients:
1 (14 1/2 ounce) can diced tomatoes, drained |
1/4 cup black olives, pitted and coarsely chopped |
1/4 cup green olives, pitted and coarsely chopped |
2 garlic cloves, chopped |
1 tablespoon capers |
1 tablespoon anchovy paste or 2 anchovy fillets, mashed |
2 teaspoons italian seasoning, divided |
6 (5 ounce) halibut fillets |
1 tablespoon olive oil |
Directions:
1. Heat the broiler. 2. Rub halibut with oil. 3. Sprinkle 1 tsp seasoning over the fish. 4. In a skillet over high heat, bring remaining ingredients to a boil. 5. Reduce heat and simmer for 5 minutes. 6. Broil 10 minutes of until fish flakes. 7. Turn once. 8. Top with sauce. |
