Halibut Baked in Sour Cream |

Halibut can be a little dry, especially if it has been frozen. This recipe adds flavor and moisture, is easy and always a hit with my family. Herbs and spices can be easily tweaked to your liking or depending on what is on hand in the cupboard. Ingredients:
2 lbs halibut fillets |
2 cups sour cream |
4 tablespoons chopped dill pickles |
4 tablespoons chopped onions |
4 tablespoons chopped green peppers (or red or yellow) |
2 tablespoons chopped parsley |
2 tablespoons lemon juice |
2 tablespoons minced garlic |
1/2 teaspoon dry mustard |
1/2 teaspoon basil |
1/2 teaspoon paprika |
salt and pepper |
Directions:
1. Salt and pepper the fish and lay it in a buttered baking pan. 2. Combine the remaining ingredients and spread it over the fish. 3. Bake uncovered at 375 degrees, about 25-40 minutes (until opaque and flaky.). |
