Half Stuffed Baked Potato |

From my collection of handwritten recipes. Note: Cook time is based on the potatoes being already baked and cooled. Ingredients:
3 large baked potatoes |
salt and pepper |
3 tablespoons romano cheese, ground |
2 tablespoons heaping green onions, chopped |
4 ounces butter |
white pepper, to taste |
3 tablespoons bacon, chopped and fried |
3 tablespoons heaping sour cream |
Directions:
1. Spoon out the meat of the potatoes and mix well with the above ingredients, saving some Romano for topping. Put mixture back into potato shells. Stick 1 pat of butter in either end of the potato. Sprinkle with romano and paprika. Heat through in 400* oven for 1 hour. May be prepared the day before needed, covered with plastic wrap, and refrigerated. Pop in oven when ready to use. |
