Women of Color Cookbook Ingredients:
1 onion, chopped |
2 garlic cloves, minced |
1 green pepper, chopped |
2 tbs cooking oil |
1 cup rice, uncooked |
4 oz ham, cooked and diced |
2 cans kidney beans, drained |
1/2 tsp cumin |
1/4 tsp salt |
1/4 tsp oregano |
1/4 tsp red pepper, chopped |
2 1/2 cups water, boiling |
Directions:
1. Preheat oven to 350 degrees. Cook and stir onion, garlic, and green pepper in oil. Combine the mixture and the remaining ingredients and pour into an ungreased baking dish. Cover and cook for one hour. |
