I think every culture has their own version of this potato dish. This is the one many Irish family use. Ingredients:
3 medium potatoes |
1 lrg onion |
4 tbl bacon fat |
3/4 c grated cheddar |
salt and pepper to taste |
Directions:
1. Wash and peel potatoes, slice into paper thin slices and pat dry with paper towels 2. Slice onion as thin as possible 3. Heat half the bacon fat in a heavy skillet and fill pan with alternating layers of potato, onion and cheese, beginning and ending with potato, sprinkle each layer with salt and pepper 4. Dot the top with remaining bacon fat 5. Cook over medium heat until potatoes are almost tender. 6. Turn the Haggerty carefully onto a plate or platter and slip it topside down, back into the skillet 7. Continue cooking until potatoes are done 8. To Serve, cut into wedges 9. 4 servings |
