A lovely, cheesy fish dish from the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
2 lbs haddock (or other white fish) |
1/2 teaspoon salt |
pepper, to taste |
2 teaspoons parsley, minced |
1 cup american cheese, grated |
2 tablespoons butter |
2 tablespoons flour |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 cup milk |
Directions:
1. Preheat oven to 350F and butter a baking dish or casserole. 2. To make the white sauce: Melt butter; blend in flour salt and pepper until fully incorporated. Add milk gradually, stirring constantly until mixture boils and thickens. 3. Add cheese to white sauce, stirring well until cheese is melted. 4. Placed the cleaned fish in buttered baking dish, sprinkle with salt, pepper and parsley. 5. Pour cheese sauce over all and bake about 35 minutes or until fish flakes easily with a fork. |
