Sea food cooked in a potjie over coals obtains a delicate smoky outdoor flavour. Ingredients:
1 large onion, chopped |
6 rashers of bacon, chopped |
olive oil evoo |
2 large potatoes, cubed |
3 large tomatoes, chopped |
1/2 english cucumber, chopped |
4 x 250 ml (1 litre) chicken stock |
375 ml (11/2 c) white wine |
1 kg fresh or frozen white fish fillets, cut in chunks |
± 16 each: black mussels |
± 2 doz prawns |
ground sea salt and black pepper |
45 ml (3 tbsp) parsley, chopped |
Directions:
1. Sauté onion and bacon in oil over medium heat. 2. Add vegetables and liquid and simmer until potatoes are 3. cooked, yet firm. 4. Add seafood, simmer for ± 10 min 5. Season and add parsley.. 6. Serve in earthen ware bowls with spoons only 7. Using your fingers adds to the fun 8. Serve hot with crusty bread. 9. Or on a bed of yellow rice 10. A delicate extra dry white whine will work well here. |
