These are delicious. I topped with Snyder's Jalapeno Pretzels for an extra kick. Very easy to make and yummy yummy. Ingredients:
15 jalapenos (preferably red, cut in half, seeded and deveined) |

1/4 cup red onion, minced |
1/4 cup red bell pepper, minced |
3 tablespoons garlic, minced |
2 cups mascarpone or 2 cups cream cheese |
1/4 cup parmesan cheese (grated plus more for garnish) |
salt |
pepper |
1/2 cup mozzarella cheese, shredded |
Directions:
1. Preheat oven to 350 and set a rack in middle of oven. 2. Place jalapenos on a sheet tray and roast for 10 minutes. 3. Remove from the oven and let cool. 4. Turn broiler on medium. 5. Heat oil in a medium saute pan. 6. Add the sausage and cook for 5 to 7 minutes. 7. Add the onions, peppers, and garlic. 8. Cook to soften for about 5 minutes. 9. Remove and place in a large bowl. 10. Cool to room temperature, then add mascarpone or cream cheese, and Parmesan. 11. Mix ingredients thoroughly and season with salt and pepper. 12. Place approximately 1 tablespoon of mixture into each jalapeno half. 13. Top with 1/2 teaspoon of mozzarella cheese. 14.
