Speedy and delicious Cajun shrimp recipe. This is so good over a bed of rice. (If you can keep them from being gobbled up before the rice is done!) I actually like to cook the shrimp with the shells on, but that's a personal preference. (The 22 minute prep time includes letting the butter/spice mix rest for 20 minutes.) Ingredients:
3 tablespoons butter |
1/2 teaspoon chili powder |
1/2 teaspoon oregano |
1 teaspoon paprika (hot, not sweet) |
1 garlic clove, minced |
1 dried bay leaf, crumbled |
2 lbs shrimp, with tails on shelled and deveined |
2 tablespoons fresh lemon juice |
Directions:
1. Melt butter in large heavy skillet and add garlic and spices (except for lemon juice). 2. Cook on medium heat for 2 minutes then immediately take off the heat and let rest for 20 minutes or so. 3. Reheat butter mixture and saute shrimp, flipping around with a spatula, for 4-5 minutes or until shrimp just turns white. 4. Drizzle lemon juice on top and place on bed of rice. Pour excess butter/spice mixture over all. |
